Nigerian cauliflower fufu is swallow made with cauliflower, which is rich in fibre. Cauliflower fufu is similar to pounded yam, just like eggplant fufu is similar to amala.
Ingredients
- 6 florets cauliflower
- 3 tablespoons palm oil (optional)
- ½ teaspoon psyllium husk

Procedure
- Cut cauliflower into small pieces, and blend with a blender to give a purée.
- Strain the cauliflower mixture through a cloth, retaining the solids.
- Squeeze the sieve cloth to drain more water until relatively dry and a dough is formed.
- Transfer the dough to a saucepan over medium heat, and stir in the psyllium husk.
- Stir and mold to form a paste, and shape into portions.

- Psyllium husk makes the cauliflower fufu moldable.
