Etymology
Contraction of the full form above, itself from Ääd (“earth”) + Appel (“apple”). Compare regional German Erdapfel (notably uncommon in Rhenish Standard German), Dutch aardappel, French pomme de terre.
The contraction probably started out from the plural Äädäppel as a kind of haplology. The contemporary plural in -e is secondary.
