Etymology

握(にぎ)り (nigiri, 連(れん)用(よう)形(けい) (ren'yōkei, “conjunctive form”) of 握(にぎ)る (nigiru, “to grasp; to form (by hand)”)) + 寿(す)司(し) (sushi, “sushi”). The sushi changes to zushi as an instance of rendaku (連濁).
