Compound of pilsner (pilsner) +‎ korv (sausage), as it was originally served together with beer. First attested in 1934.

    • 1917 October 2, “Ölkaféerna och de nya restriktionerna [Beer cafés and the new restrictions]”, in Aftonbladet, via Svenska tidningar, page 6:
      Så länge priset på restriktionsmaten var satt till endast 15 öre, gick det ju an att till ölet servera en bakelse eller en tårtbit och i värsta fall ens. k. pilsnerkorv, som ju var lätttillagad.
      As long as the price for the restriction food was set at only 15 öre, it was possible to serve a pastry or a piece of cake with the beer, and in the worst case, a so-called pilsner sausage, which was easy to prepare.
