vācietis m (2nd declension, feminine form: vāciete)

1. a (male) German, a man from Germany

2. (genitive plural; rare, usually vācu): German, pertaining to Germans or Germany and its people

   latviešu un vāciešu kopīgā pagātne ― Latvian and German shared past

   vāciešu nacionālā virtuve ― German national cuisine

Vācieši is the preferred term for “Germans”; vāci is possible but much less frequent. In the genitive, when used adjectivally, however, vācu is the preferred form. In particular, only vācu valoda (“German language”) is possible.
