I would like to have the full control on the Windows 10 updates. I have already searched on the Internet and I have found this Github repository: https://github.com/W4RH4WK/Debloat-Windows-10

I need to know if those PowerShell scripts are enough or if I need to do some extra stuff.

As annoying as updates can be, Microsoft intentionally made it near impossible t disable automatic updates in Windows 10 for security reasons. I believe it's possible to disable automatic updates on the student or enterprise versions of Windows 10 but its not advisable to do that and much more difficult on other editions.

Upgrade to Windows 10 Education/Enterprise. You get options to ignore updates.

If you can't do that, Windows 10 Pro lets you postpone updates.

Powershell scripts can be a bit risky. If you MUST have a free solution, try Windows Update MiniTool which allows you to select which updates can be installed and which can be blocked.

But be warned;

Any unofficial methods may invalidate your Windows License or break Windows!
