I have a problem of providing acceptable video modes of Dell 2007FP display to ASRock NUC-125H R2 video source. I thought that EDID Emulator will be a solution, but I'm surprised by the functionality of a model I found. EDID 101D documentation states:

Since there are video modes on that list, which are not supported by my display, what is the point of pre-programmed EDID if the whole list will be reported to the video source? Is there a way to force a video source to use a specific video mode?

Looking at Brochure, it appears to be used with a video switcher - and the diagram there gives examples of it used with devices. There's also a user manual

As per the latter

The Extron EDID 101 is a standalone EDID Minder device that emulates EDID to a DVI or VGA source. It helps ensure the video source boots up correctly and constantly outputs video.

This might be useful if either some device in between doesn't pass on 'correct' EDID data, or, depending on the device the video source expects the display to meet certain specifications but does not - I have a device that lets me use an otherwise non HDCP compliant display to work with netflix.
