Ultimately derived from Latin glūten. Compare German Gluten and Russian глюте́н (gljutɛ́n), both with a different syllable stress to the Yiddish term. The masculine gender likely derives from the Russian cognate, and also Polish gluten (hence the irregular syllable stress).
