Etymology

Compound of (yabu, thicket) +‎ 蕎麦 (soba, buckwheat noodles).[1][2][3] Originally the name of a prominent soba restaurant in the Edo period, probably so named for the bamboo thicket in the garden where the first such location was established.[1] This business became known for its style of soba noodles, using buckwheat flour milled with the light-green endocarp still on the grain, coloring the noodles.[1][2]
