Uncertain. Perhaps from Middle High German stūchen (to cup, bleed), from Middle High German stūche (cupping glass). Alternatively, perhaps from Middle Low German stûken (to push, compress, arrange flax in small bundles for drying), from Middle Low German stûke (bundle of flax set up to dry, bunch of grain).
